A supplier raises a price. The delivery lands, the cost per item changes, and nothing tells you the margin you set six months ago no longer holds. You find out at month end, if at all. True COGS records every price you pay, receipt by receipt, and never overwrites one. That record says what one cost field cannot: which margins shrank and by how much, what a variant cost on any past date, what your stock was worth at year end. Weighted average or FIFO. A year-end pack an accountant can check.
